Method

For Pistachio Sponge

  1. Mix Tegral Satin Pistachio Velvet EF and water together using paddle attachment for 1 min at slow speed and 3 mins at medium speed.
  2. Add oil
  3. Mix for 1 min at a slow speed
  4. Bake at 160⁰c for 30 to 35 mins

For Cardamom Mousse

  1. Boil milk with cardamom to get the flavour infused, strain it after the flavour is infused.
  2. Make a ganache with milk and Carat Coverlux White
  3. Add Cremfil Classic Vanilla and whipped cream to the ganache
  4. Layer the pista cake with the cardamom mousse
  5. Garnish it with pista crumbs and neutral glaze with green colour.
