Working Method

Method
  • Mixing:                Mix all ingredients together for 3 minutes at low speed                                    and 5 minutes at medium speed. 
  • Dough                 26-28°C.

  • Bulk                     15 minutes. 
    fermentation
  • Scale:                  70 gms 
  • Shape:                 Roll and shape like mini hot dogs. 
  • Final Proofing:  50 minutes at 35°C / 85% humidity. 
  • Preparation       Spray water and dust flour and score in the centre 
    before baking:   (15 minutes before baking) 

Baking
  • Baking: Temperature: 200°C. Bake with steam. 
  • Baking time: 15-20 minutes. 
  • Open damper and bake for 5 minutes for crusty breads.
