Mix an the ingredients for 3 minutes at low speed and 8 minutes at medium speed.
Put the prepared dough in oil greased bowl for 60minutes. Then knock back & fold the dough. Repeat this process twice.
Once proofing is done, transfer them on flour dust table, sieve the flour on top of the dough (as in dusting) 6 divided approximately 100 gms of portion.
Place them on greased trays 6 final proof them for 20 minutes, bake at 200°C.
Dough temperature after mixing: 18 to 20°C.
Baking
Baking: Oven temperature: 200°C.
Baking time: 18 minutes with 7 seconds of steam.
Bake last 6 minutes with open damper for crispy crust.
